I have half of the ingredients for choc chip cookies in the mixing bowl. Just realized I'm out of brown sugar. Anything I can substitute for it? Would plain white granulated sugar work? Help!

Do you have molasses? If so, combine 1.5 tablespoons with your 1/2 c white sugar. If not, you can use regular white. The cookies will probably just be a little crispier.

Would it be insanity to use regular white sugar and put a quarter teaspoon of instant coffee in? Or allspice? Or pumpkin pie spice? Or praline?

Thank you all for your suggestions. In the end, I found molasses so I added 1-1/2 T to the granulated sugar. I will let you all know how the cookies come out. Thanks so much.

I tried using the molasses as you suggested. The cookies taste delicious, but are a little on the "darker" side. If I make another batch, I might try using 1 Tablespoon molasses rather than 1.5. Otherwise, perfect. Thanx for the suggestion.

You could also do white sugar and a bit of maple syrup....
