I was thinking of doing this, tell me what you think.
1 small egg roll
some white rice
topped with homemade general tso's chicken on top.
It needs to be a small amount so I can fit it into one of the chinese food take away boxes.

Mmm, sounds yummy. How will you get it not to be soggy? Make it the day of?

Good question
I guess I would assemble it all the day of but make it probably the day before and put it in the oven the day of just to get crispy again.

My other option is a greek salad with garlic knot,

I have a ton of ideas and need to narrow them down somehow. I have time to figure it out Smile

Since you're making in advance, my advice would be to use two mini Chinese takeout boxes, one for rice, one for eggrolls, and a container for sauce. Add some chopsticks, packet of soy sauce and maybe a fortune cookie.

how will it stay refrigerated/fresh? Especially if you heat it up that day.

I did the chinese theme a few years ago. I made my own sushi. It worked out great. And I served everything in a chinese takeout box. It looked adorable...

Isn't sushi Japanese? How does that fit into a Chinese theme?
