Can you help me perfect my Challah.

I am on a mission to perfect my challah and am wondering if anyone can help. My challah comes out dense and light brown color. I can not get a light and fluffy loaf as hard as I try. I have tried several recipes and follow them to the tee. I have tried different types of yeast and follow the instructions for dissolving. I also recently tightened my Bosch. What else could the problem be?

I found that when I use my kitchen aid, the challah seems to come out denser. The kitchen aid does such a good job of kneading the dough, that it is too sticky to handle, and I need to add more flour.

I stopped using the kitchen aid and knead it by hand. When my dough is very very sticky, and I let it rise for 2 hours before shaping, and another hour after it's shaped, it tends to come out fluffier.
