ok lets see if I remember it from my head, I dont have my recipes in front of me. slice them and take out all pits. and imean all of them. then cook them in water for about an hour. then add sugar but you need to weigh the sugar. so for a pound of esrog you put in a pound of sugar. cook for a couple of hours till the esrog is soft. after its cooled the esrog has a tart taste. of course its sweet but also tart. dh loves this. I so so. its basically compote. some people put in quince apples too. I hope I gave you all the details. if someone knows a more definite recipe please chime in as I am not sure.

ok I remember better, I think its a pound of sugar per esrog. not a lb of esrog a lb of sugar. now it makes more sense.

Great! Thanks would you know how long to cook it ? Low? Also does the esrog need to be in water? If yes for how long?

I used to keep it in water but now I dont I dont see the difference. I already cooked mine right after yomtov. I slice the esrog and put into medium size pot(my fish pot) and then fill the pot 3/4. cook for an hour and then add sugar. then cook for about 2 hours. if the esrog is soft then stop cooking. dont overcook it gets mushy. you want nice slices. when its properly cooked it looks like a compote. make sure there is enough sauce. if theres not enough water then add. taste it and if it needs more sugar then add.
