Here's where I might not do the poem thing. You can send them the standard ferris wheel poem you're giving everyone else but take the time to write a personalized note.

I am not doing a Ferris wheel theme for all my mishloach manos, it is specifically only for teachers...

Thanks for all the work you do,
May Hashem reward you beyond all bounds
Because I'm sure of this simple fact
What goes around comes around.

OK, lame ;-)
And whatever you do, personalize it: Dear Rabbi/Mrs/etc. Ploni, Yankel/Genendy is flourishing in your classroom this year. We're very grateful for your going the extra mile. May you see much personal and professional nachas. Sincerely, Mr./Dr./Rabbi and Mrs./Dr. Almoni.

Tending the children can be challenging we know
The young neshamas blossom and grow
They have their moments where they seem unsure
And we wonder if at times intentions are pure
The mess they manage to leave is a shock
The times they won’t answer, when asked to talk
The changes they go through each and every day
It can be overwhelming and not child’s play
When all seems hard with no thanks in sight
When no breakthrough is coming and you feel alone in your plight
Remember this lesson I will teach you today
That things can look up in any which way
Try to imagine a Farris wheel tall in the sky
Reaching the heavens each seat ready to fly
The seat you are in it reaches so high
Soaring above the birds that fly by
They see you rise and they see you whorl down
They fear that you may crash to the ground
But what they don’t realize is that wheel is quite sound
It won’t end up crashing but will come around
Its lifted again when things may look bleak
And rises again when you just take a peak
And so this story is clear to see
What goes up is really meant to be
Your encouragement, which we appreciate
Helping the kids blossom, which makes you so great!
or helping kids blossom an admirable trait
( feel free to fix it up )
