Recipe for Yerushalmi Kugel made of Spaghetti squash

A few years ago I made Yerushalmi Kugel made of Spaghetti squash and lost the recipe. The kids enjoyed it

I think I got the recipe from the Lakewood voice.

If anyone has such a recipe please share it.

Also known as Mock Noodle Kugel

1 Spaghetti Squash
3 eggs
salt and pepper to taste
1/4 cup of sugar
1 tsp. cinnamon
1 tsp. nutmeg

Cut the squash in half, place in a 1/4 cup of water in microwave for 10 minutes. Once it's cooled use a fork to scrape out the squash. Preheat oven to 400. Lightly beat eggs and add them and the rest of the ingredients to the squash. Pour into a greased 8x8 pan. Bake for 10 minutes, then lower temperature to 350 and bake for another 30 minutes.

You can probably omit the corn syrup as the recipe calls for making a simple syrup out of the sugar and water on the stove top anyway.

Do u think this or the other recipe above can work with Splenda?
Having company that won't appreciate a sugary side dish

Can I make this as a simple salt and pepper kugel with out the sugar cinnamon and nutmeg?
