A few years ago I made Yerushalmi Kugel made of Spaghetti squash and lost the recipe. The kids enjoyed it
I think I got the recipe from the Lakewood voice.
If anyone has such a recipe please share it.

Also known as Mock Noodle Kugel
1 Spaghetti Squash
3 eggs
salt and pepper to taste
1/4 cup of sugar
1 tsp. cinnamon
1 tsp. nutmeg
Cut the squash in half, place in a 1/4 cup of water in microwave for 10 minutes. Once it's cooled use a fork to scrape out the squash. Preheat oven to 400. Lightly beat eggs and add them and the rest of the ingredients to the squash. Pour into a greased 8x8 pan. Bake for 10 minutes, then lower temperature to 350 and bake for another 30 minutes.

This isn't yerushalmi kugel but its,a yummy spaghetti squash kugel that I make during the year and it's good for pesach too! |
That looks good. Have you ever tried freezing it?

You can probably omit the corn syrup as the recipe calls for making a simple syrup out of the sugar and water on the stove top anyway. |
Do u think this or the other recipe above can work with Splenda?
Having company that won't appreciate a sugary side dish

Can I make this as a simple salt and pepper kugel with out the sugar cinnamon and nutmeg?
