I have 2 hot dogs I wanna use up. Was gonna make hot dogs in blankets, but I'm already making potato bourekas, don't need two dishes with pastry dough. It's just me and my husband eating. Any other hot dog ideas nice enough for shabbos?

I once saw a friend prepare the following for her kids:
cut up hot dogs
can of baked beans
slices of potato (you can use canned potato slices)
baked in oven covered - not sure how long
they were gobbling it up and called it "goulash"

I use to make this for my kids all the time
Yellow rice with peas and hotdogs.
Just slice them when you make rice.

I beg to differ ... once you're doing the knishes - franks-in-blanks match
also I have created a version should it be of interest
pre-cook franks cut into 4 - take eggroll wrappers and fill with piece of hot dog and some sour kraut & deep fry - serve with mustard or same condiments you eat with a regular frank [not everybody likes mustard so I wouldn't put it inside]
