Any ideas how I can serve hot dogs without a bun? Maybe something with beans or veggies?

We serve them wrapped with lettuce and filled with saurkraut. If you need a carb you can make homemade baked beans

We also slice them and saute them with onions or mix with eggs.

Hot Dog and Veggie Kabobs

A low calorie kabob recipe with reduced fat beef franks and vegetables brushed with a teriyaki glaze

ETA - You can obviously broil the kebobs if you don't have a grill.

Hands On:20 | Total: 20 | Makes: 4 servings (1 kabob each)

Ingredients:

PAM® Grilling Spray
1/3 cup La Choy® Teriyaki Stir Fry Sauce-Marinade
1 tablespoon La Choy® Lite Soy Sauce
4 Hebrew National® Reduced Fat Beef Franks, quartered (from 11-oz pkg)
1 medium zucchini, halved lengthwise, cut into 1/2-inch slices
1 cup halved fresh button mushrooms
1 small red onion, cut into 1-inch pieces
1/4 teaspoon garlic powder
1/8 teaspoon ground black pepper

Directions

Spray cold grate of gas grill with grilling spray. Preheat grill for medium heat. Meanwhile, combine stir fry sauce and soy sauce in small bowl; set aside.
Thread pieces of franks and vegetables on each skewer. Sprinkle with garlic powder and black pepper.
Grill 2 to 3 minutes; turn over and brush with sauce mixture. Grill 2 to 3 minutes more or until browned and grill marks appear. Turn again and brush second side with sauce; grill until hot, being careful not to burn.

Nutritional Information:

4 servings (1 kabob each) Calories 138; Total Fat 9 g(Saturated Fat 3 g); Cholesterol 25 mg; Sodium 751 mg; Carbohydrate 10 g; (Dietary Fiber 1 g, Sugars 4 g); Protein 6 g; Percent Daily Values*: Vitamin A 11%; Vitamin C 14%; Calcium 1%; Iron 7%

* Percent Daily Values are based on a 2,000 calorie diet.

Cook's Tips

Metal or bamboo skewers may be used for this recipe. When using bamboo skewers, soak in water at least 30 minutes before using. For easier clean-up, cover grill cooking grate with a piece of aluminum foil sprayed with PAM® Grilling Spray.

Thread each hot dog through a skewer. Smear with sugar free ketchup, coat in toasted and seasoned ground almonds. Arrange on cookie sheet and bake at 350 for 10-15 minutes until lightly browned.
Serve with carrot or butternut squash fries and homemade onion rings (almond coated).

Hot dog vegetable soup:

carrots
onions
golden beets
sliced hot dogs
beef stock

Sautee the vegetables (and add whatever you want), add sliced hot dogs and beef stock and cook for a while. I made this in the crock pot. It was delicious and the kids ate the veggies no problem.

I make this with chicken sausage buy why not hot dogs?

http://www.budgetbytes.com/201.....sage/

The only change I make is that I usually use a full pack of 4 while the recipe calls for 2.

You could sub franks for the sausage

Lentil Soup with Spicy Italian Sausage
--------------------------------------------------------------------------------

Recipe By: Bon Appétit
Serving Size: 8

Ingredients:

2 tablespoons olive oil
1 lb. fully cooked hot Italian sausage, cut into 1/2-inch cubes
1 large onion, chopped (about 3 cups)
2 large carrots, peeled, chopped (about 1 3/4 cups)
2 large parsnips, peeled, chopped (about 1 3/4 cups)
2 large celery stalks, chopped (about 1 cup)
2 1/2 teaspoons dried Italian seasoning blend
1 lb. brown lentils (about 2 1/3 cups)
3 quarts (or more) low-salt chicken broth
1 5-ounce package baby spinach leaves

Directions:

Heat oil in large pot over medium-high heat. Add sausage and cook until browned, stirring occasionally, about 5 minutes. Using slotted spoon, transfer sausage to bowl. Add onion, carrots, parsnips, celery, and Italian seasoning blend to drippings in pot; cook until onion is translucent and vegetables begin to soften, stirring often, 7 to 8 minutes. Add lentils; stir to coat. Add 3 quarts broth. Bring to boil; reduce heat to medium and simmer until lentils are tender, stirring occasionally and adding more broth by 1/4 cupfuls if soup is too thick, 20 minutes.
Add sausage to soup and simmer until vegetables are tender and flavors blend, 10 to 12 minutes. Season to taste with salt and pepper. Stir in spinach. Cook until spinach is wilted, about 3 minutes.

Looks really good, but how on earth do you eat that?

Maybe I'll cut the franks and mix it with the peppers.

Thank!
