I feel like I said something stupid today.
Was talking to someone on the phone and they said thank you to me for something. They said they were impressed by my behaviour.
I said "you don't have to thank me!"
it just rolled off my tongue.

How is "you don't have to thank me" different from the classic "don't mention it"?
Your listener wasn't thinking that you're giving her a lesson in etiquette; she understood that you were being self-depreciating (not self-deprecating, which is a very bad thing), which is considered a mark of modesty, humility and politeness.

To answer your question, I wouldn't "feel" anything. You uttered a polite formula that was not to be taken literally.
