Id use frozen broccoli with Pesach Crmbs, but
1- Do I brown the Crumbs first
2- How do I get the Crumbs to stick?
For Shnitzel I use Duck Sauce which wouldnt work well with Broccoli or Cauliflower.

If you don't want to take a chance, why don't you just roast the broccoli and cauliflower?
Toss with olive oil, sprinkle on cracked black pepper, fresh minced garlic, and a little kosher salt. Roast at 200C for 15-20 min (check it).
If you don't eat garlic on Pesach, use another herb.

You can make cauliflower rice. Chop the cauliflower to rice size. Use about 3 tablespoons of olive oil and saute one onion about 8 minutes on high. Cook the riced cauliflower 5 minutes. Add parsley and lemon juice.
Kids love this and healthier than crumbs.
