Can you help me with my two tone boureka?

I'm thinking of making something like this for shavuos.
Puff pastry
On one side fill with sautéed spinach and onion mixed with an egg and salt/pepper, mashed potato?
The other side can be orange, like some sort of carrot mix? Mashed sweet potato?

I would brush with egg and top with sesame seeds and bake until puffed.

Does anyone know of an actual recipe like this or can help me with these fillings?

I have a delicious recipe like this, using a broccoli filling on one side and a sweet potato filling on the other. Lots of work but looks so pretty and is yum. If you want I can post it tomorrow.

It's called two tone danishes in the blue nitra cookbook.

1 package ready flaky dough squares

Broccoli filling:
1 lb broccoli cooked and mashed
1/2 tsp salt
1 egg
1 T. mayo
1 T. onion soup mix
1 1/2 T. flour

Sweet potato filling:
3 sweet potatoes cooked and mashed
1 T. honey
2 oz margarine

Combine ingredients for the fillings.
Place 1 T. of broccoli filling onto one corner of each dough square. Place 1 T. of sweet potato filling on opposite corner. Bring the two remaining corners towards center and close well. Brush with egg, sprinkle with sesame seeds. Bake at 375 for 20 min.

Tip- reserve a drop of the 1 egg to brush on top.
