We just did our honeymoon in Italy for a bit less than 4k for 10 days in August. We got a good deal on flights - I think $1100 total for both of us round trip. Rome, we stayed in the kosher b&b. Florence we stayed in an airbnb - it was a really nice apartment right next to the shul, I think about $275 for 4 days. In Venice we stayed at a small but nice hotel near the ghetto. We used the trains to get from city to city and walked within the cities. We used the Roma Pass to save a few bucks on the attractions in Rome, and the Venezia pass for Venice as well. We were definitely trying to do the trip for a reasonable price but also splurged on certain things (like scuba diving in Cinque Terre and buying some nice stuff to take back). If we wanted to be extremely budget conscious (not eating out at every meal) we could've done it for less. But 4k was where we landed with "trying to be price-conscious but not counting every dollar."
