Overripe grape tomatoes are great just tossed with olive oil, salt & pepper and roasted until they burst.

Easy delicious tomato soup:
Peel tomatoes and an onion (or more if you have a lot of tomatoes. Saute then in a bit of oil for a few minutes. Add water, salt and pepper to taste and cook for 40 minutes. Blend.

I do 1:2 peppers to tomatoes.
Sauté onion and garlic until soft, but not totally cooked. Add diced peppers and tomatoes. Season with salt, pepper, chili flakes, and turmeric. Let simmer on low until super soft.
