We can’t do all the fancy roasts, minute steak etc so I’m quite limited.
Any suggestions?

And super easy please...! My life is extremely overwhelming now... kids are young, so very simple is perfectly ok (though they don’t really like chicken in the bone which further limits my menu options... Banging head)

Rice and chicken casserole -
Before serving I mix in slices of hotdog in the rice for the kids, the adults eat the chicken
With the leftover chicken shred and have tacos everyone likes that

Shake- n - Bake chicken - there is crumbs and bbq glaze. Both are really good and easy.

Chinese chicken.
Cut cutlets (I use 2 lbs in a 9x13) and put in Ziploc bag with some flour and a pinch of salt if you want and shake.
Put in pan. Dump in frozen bag of pepper and onion strips, canned mushrooms if you like, baby corn if you like, etc
Mix up equal parts light olive oil, soy sauce, brown sugar (about 1/3 c each but if you do a lot of veggies, 1/2)
Pour over and bake at 350 for about an hour.

One pot chicken lo mein can work (I can find the recipe online if you need)
Caramelized onion chicken
Sheet pan chicken with baby potatoes and broccoli (I make this every year erev YK)
Can you do ground beef to change things up?

Minced chicken in pastry (can buy the pastry)

Breaded, fried shnitzel. Buy a couple different sauces, can pour over for whoever likes or keep plain.

I like pickled turkey roll as you just add water and cook for hours. I serve it sliced, cold.
I also usually get a big pack of chicken shnitzel and do some as coated shnitzels, then the rest cut into strips and with different sauces. I try and vary the type of sauce, whether it's sesame sauce, sweet/sour etc to make a variety. It's usually very simple and a case of mixing the sauce, pouring over the chicken and cooking.
There's also chicken in pastry-you can used minced or strips. I usually make a stir fry, then put into a square of puff pastry, fold over and cook.

I buy it already pickled. I do pour out and put fresh water in after approx 10 minutes of cook time to make sure it isn't too strong. I once made it without changing the water and it was too salty. I'm now always very careful to make sure I do change the water.

Baby chicken cutlets cooked under tender for your favorite sauce. Serve with rice made in the oven.

Kishke stuffed chicken. Defrost loaf of kishke and slice. Roll into small logs. Wrap thin cutlets around and secure with toothpick. Rub with apricot jam and roll in cornflake crumbs. Drizzle with honey and bake uncovered 30 minutes.

Stuff capons with your favorite baked rice. Roll, secure and lay in pan. Spice and pour sauce over. Bake uncovered for 1 hour and 15 minutes.

Chicken in wine sauce:

I've used either cutlets or chicken on the bone. Skin chicken. Squirt lemon juice on each piece and pour about 1 cup of any cheap white wine. Sprinkle a little pepper. Open a can of mushrooms and toss on top.

Bake covered. Extremely flavorful. Feels really fancy when it isn't.
