I doubled it and made it in a 9x13. I used the baking powder and vanilla. I realized that it would need longer bake time for the bigger size. after 1 hr it was puffy but still liquidy in the center. 15 minutes later it deflated and got brownish/crispy on top - not burnt but slightly overdone. it tastes ok.
so for anyone out there who doubled it - how long do you bake it for?
also - does it come out better if I skip the baking powder (I'm assuming the puffiness and then deflatedness (I know thats not a word :-)) is b/c of the baking powder)

Well, I doubled it but put it into TWO 9 by 13's. So in theory I cooked each one for the regular amount of time. In reality, b/c it was a convection oven, I shortened the cook time. I don't think you had to double it for one 9 by 13 based on how much mine made. Maybe that's why it wasn't cooking through.

if you put the original recipe in a 9x13 does it come out really thin like bars? I doubled the recipe and put it in a 9x13 and it didnt even fill the whole pan to the top, even after rising during baking

Just wanted to say that this cake was by far the biggest dessert hit over Y"T. I served it to a few different families for dessert, and each family called after Y"T for the recipe!
It doesn't taste like pesach cake! Thank you so much for posting!

I didn't use baking powder or vanilla. (I tend to be a bit stingy in buying ingredients for Pesach. Maybe I shouldn't be.) I don't remember how it turned out last year, just that I liked it a lot. I think the two times I make it, they came out differently. I already made my first batch in a 9 by 13 pan. It is very crunchy. I seem to remember it being less crunchy last year.
