The change from the cashiers hand?
Does he drop the coins in to your hand?
Does it make a difference to you if he is Jewish or not.

I mostly pay credit card 😎
I also shop in a lot of Jewish stores that are sensitive already to this. I would never ask a cashier person (what are they called?) to put the money down on the counter. I would put out my hand and have them drop it in, or I am busy when they are giving change so they just put it on the counter automatically.

Who's everyone?
If it's coins it's usually dropped, because handing 7 coins can be a pain.
I've never seen a bill dropped.
There is a specific place near the cashier where they are supposed to put the cash -because the customers are busy bagging.

They are called cashiers. And according to all the memes I've seen they prefer to for you to hand them the bills and for them to hand you the change because if it falls on the counter it can roll the side and that can be issues

IMNSVHO. its probably a lot less tznius for a man to have you in his head for a few hours as that neurotic lady who was acting weird while he was trying to pay

I have never heard of this being "derech chiba"... I mean what sort of thoughts pop into someone's head when they are giving/taking change?
Do you see this person regularly? I tend not to get the same cashier each time I shop... Also dont think they remember everyone who checks out or even thinks about them 10 seconds later. Unless they make a big deal about something so inconsequential...
(Not talking sanitary reasons... during covid some cashiers did put it down with the receipt too...)
