I made lots of meringue cookies, and now have leftover yolks in the fridge. Any ideas about what to do with them? I’d love a dessert recipe! Thanks!

Would you know of a mouse recipe that uses just yolks, or at least far more yolks than whites?

I have one!
12 egg yolks, beaten
4 egg whites
250 g good chocolate
2t vanilla (or vanilla sugar)
Pinch of salt
A few oz sweet wine
1. Melt chocolate, stir in egg yolks, wine and vanilla (alternate wine and beaten yolks into the chocolate)
2. Whip whites until stiff, add a sprinkle of salt.
3. Take about 1/3 of the whites and stir it gently into the chocolate mixture.
4. Fold the chocolate mixture into the rest of the whites. Chill.

nut cookies
8 egg yolks
1 1/2 c sugar
3 tbsp orange juice
2 c ground walnuts
2 c ground almonds
Mix all ingredients and then refrigerate batter.
Roll into balls. Bake at 350 for about 25 min.
The cookies will be soft when they come out of the oven and harden as they cool.

Mayonnaise!!
If you don't use garlic for pesach you may use very finely chopped or grated onion or onion powder as a substitute for mustard.
You may use the mayor as a base for salad dressings. Add ketchup and a tiny bit of instant coffee plus a pinch of sugar and your get thousand island dressing. If you have KLP brandy add a tablespoon.

AFAIK no.
IMHO salmonella issue aren't a common thing as long as you aren't pregnant or give to babies. If you buy eggs in a reliable store at shouldn't be an issue.
Salmonella hype is good for the manufacturers so I can imagine they have an interest in keeping it a hype.
