We recently had a baby and my husband received a few baby gifts. Some of them very generous and from different departments within his company that he works with. The question is how would you send thank yous and show appreciation for all the gifts?
Is an email thanks enough or do we send thank you cards? To send cards- Do we ask HR for everyone’s addresses or give them out at work?

Handwrite a card and either have your husband bring it into work or if he's not going back right away, drop it in the mail address to the department at work

ETA do not ask HR for the addresses. That is just kind of creepy. If you're friendly enough with someone to know their home address, that's one thing, but to get it from HR. No way. HR should never be giving out addresses.

Send to the department. I sent thank you cards to our secretary for her to show the supervisors etc.

Email to all the individuals and a thank you card to put on the office bulletin board or break room wall or whatever they have there

Each workplace has it's own culture. At my office, the culture is to write one thank you note and leave it in the kitchen by the coffee machine. Ask your husband what is done there.
