We're planning a trip Vail in August and we're not sure what to do regarding food for Shabbos.
Kosher Vail (chabad) is closed for the season.
Anyone have any good ideas what to do?
Did anyone ever go there and shlepped Shabbos food? In hotel...

Denver would be my first choice as already mentioned. If not, KMR will be in Vail, so you could contact them to see if they would be willing to sell you food, or let you pay to eat with them.

Pick up in Denver at East Side Kosher Deli (or try your luck at a mainstream grocery with a kosher section). City Market in Vail stocks a number of kosher products, although no kosher chicken or chalav yisrael milk that I saw.
