Im looking to take my kids for a day trip Thursday, weather supposed to be nice so wanna be outdoors but cant seem to come up with anything that be fit for my children ranging from 1-17. It can be up to 2-1/2 - 3 hours drive from the NY area

that's quite a wide range! I also have children those ages, here are some outdoor ideas:
bear mountain where you can do boating and hiking?
seaside heights nj where there are outdoor rides for all ages on the boardwalk, I believe bike rentals there as well. (if tznius is an issue, than this might be a bad idea)
Philadelphia zoo - not sure if your older kids would enjoy
cape may zoo - ditto...

Connecticut. The aquarium “Maritime Museum “ is great for all ages. It may pay for you to get a membership, you can check online or ask when you get there. There is also a pez factory in Connecticut, I haven’t been but I would look into. And there are some nice parks around. Check online for kosher food options in Connecticut or just bring your own.
A poster above mentioned Bear Mountain. It is beautiful but check if it has reopened yet. It was closed due to damage from the big storm in July.
