Is there a dough that is close enough to kindle dough that I can buy? My kitchen table is in the succah so I'm trying for the least patchka possible.

kindle is a traditional sweet nut cookie/cake eaten on Simchas Torah.
Mechels makes a kindle dough.
Before Amazon chases us for copyright infringement my grandmother was making kindle in Europe.

Kindel looks like this - from Kosher.com.
There are 2 versions of the dough for that particular recipe.
