pretty sure we'e discussed this many times over the years. do a search. iirc the best mac and cheese is made with cheddar cheese.

In my experience, the difference is in freshly grated vs store bought shredded cheeses. The shredded doesn't melt as well as it has anti-clumping agents. The freshly grated melts so beautifully.

I think freshly grated=in your own kitchen. You grate it from a brick of cheese.

You can't buy freshly grated or it won't be fresh..I use a mixture of American and cheddar or Munster cheese it is yum. American is very very creamy and sticks beautifully. I make a sauce first with milk flour american and Munster cheese then when it's creamy I add the pasta
Eta I use the sliced Munster /cheddar cheese it's same idea as shredding myself as no artificial additives

Try adding some gruyère cheese if u can find it, so perfect and melty

Yes, somehow the sliced cheese melts better than the shredded. But none as delicious as the freshly grated. And by freshly grated I did mean to grate yourself from a block of cheese.

Cook macaroni, drain.

Do not rinse, the starch helps the cheese stick better.

Pour milk in a pan and melt cheese in it,

Stirring over low flame.

Add macaroni, stir to coat, enjoy.

Alternative, melt the cheese in pizza sauce, instead of milk.

Or just add some ketchup to the macaroni and cheese.

About the cheese melting well-
Haolam reduced fat American cheese slices melts best in pasta.
It makes the pasta perfectly creamy with the cheesy flavor.

right but where? I’ve never seen a block of cheese. My mother used to grate the cheese for the pizza and it was the best!
