Spicy chicken couscous stew
1. In a pot / dutch oven on the stovetop, pour about two tablespoons of olive oil and set to medium heat. Add one large chopped yellow onion, two chopped garlic cloves, and an inch of ginger, grated. Keep on the heat a few minutes until they soften.
2. Cut up 1lb chicken breast into cubes and add into the pot, stirring until it is browned on all sides.
3. Add in the following: four chopped carrots, three diced Yukon gold potatoes, 2tbs flour, 1tbs curry powder, 2tbs tomato paste, 1tbs sugar, 2tbs soy sauce. I also add a sprinkling of paprika and salt.
4. Pour in four cups of chicken broth and about 1/2 cup of Israeli couscous.
5. Cover and cook over medium heat for about 35 minutes until the potatoes and carrots are soft and the couscous is cooked.
