ISO recipe for "healthy" rolls/bread

Anyone have a recipe for rolls/bread that are healthy...ie not white flour/sugar and tastes really good? I'm not allergic to anything...I just love carbs and want to eat something more on the healthy side.

What's your idea of healthy? Whole spelt?

Gluten free?

Sourdough Einkorn?

Rories gluten free low carb mix?

Grain free rolls?

I modified an excellent, easy onion roll recipe from this site to make it healthier (but not low carb or low cal)

Dough:
2 cups warm water
4.5 tsp. dry yeast
6 Tbs. oil -I use about 4 Tbs olive or avocado oil.
2 tsp. salt
7 Tbs. sugar -I use about 4 Tbsp honey.
6 cups flour -I use either all whole wheat flour or 3-4 cups whole wheat flour plus 2-3 cups ground oats (I
grind oatmeal in the blender or food processor until it's fine) or oat bran.

Filling:
1 large onion, finely diced
6 Tbs. oil (was too much; you can cut it to 4)
Yolk, for egg wash (I skipped this)

1) Preheat oven to 350 degrees.
2) Toss onion with oil, set aside.
3) Combine all dough ingredients and knead until dough forms (The original poster uses a mixer. I always knead it by hand. It really comes together quickly.). Divide dough in half. Cut each half into 12 pieces.
4) Roll out each individual piece of dough into a square or circle. Place 1 Tbs. of onion in the center Fold in the two ends. Add a little more onion on top (I did only one layer of onions because it didn't look like I had enough) and fold in the other two ends. Place seam side down on a lined baking pan. Repeat with remaining pieces and place all 12 rolls on the sheet. Repeat with second ball of dough.
5) Brush with beaten egg yolk. Sprinkle the tops with additional onions.
6) Bake for 35 minutes (I found the baking time to be spot on).

Yields 24 rather small rolls

The onion filling adds a lot but I often just bake the dough as plain rolls and top with a sprinkle of herbs and/or pink Himalayan salt.

Thank you for the recipe!

I don't need keto or gluten free was just looking for a healthier option than plain white flour/white sugar.
