Does anyone have recipe for donuts that are gf, yeast free, fried, and GOOD? Gf oat flour is fine.

I don't know much about gluten free sourdough bread.
I just did a Google search for you. https://my100yearoldhome.com/e.....cipe/
This recipe seems like a dough that holds its shape together well enough that it might work to fry.

Don’t deep fry things without gluten, they fall apart. Pan fry.

230 grams starter
700 grams king Arthur all purpose flour (prob other flours work too, this is just what I use)
175 grams non dairy milk+125 grams hot water
15 grams salt
40 grams honey
50 grams oil

I'm a sloppy sourdough bread baker with terrible adhd lol. No major instructions. I just mix everything together, leave on counter around 6-8 hours or 12-14 in the fridge. I find it easier to Shape from fridge but either way works. Shape it, let sit for an hour, then deep fry. They continue to brown after removed from oil, so just be careful not to leave them in too long.

I've been making these for years. They're super-easy and delicious!!!
Gluten Free Dairy Free Doughnuts
Dry Ingredients:
1/2 cup White Rice Flour
1/2 cup Tapioca Starch
2 1/2 Tbs. Sugar
1/4 tsp. Baking Soda
1/2 - 3/4 tsp. Baking Powder
1/2 tsp. Xanthan gum
1 Tbs. Vanilla Sugar
1/8 tsp Salt
Combine all dry ingredients in a bag or bowl. Set aside.
Wet Ingredients:
1 Egg
1/4 Cup Oil
1/4 Cup Water
1 tsp lemon juice
Combine wet ingredients in a bowl, mix, add dry ingredients, Batter should be a thick creamy texture, (if too thick add a drop of water)
Heat about 2 inches of oil in a saucepan. Drop batter by rounded teaspoon into hot oil. Once lightly browned on both sides, remove and place on paper towels to drain. (do not crowd leave room doughnuts will turn on its own.) Yield approximately 15 doughnuts.
Dust with powder sugar, or cut open to add filling.
