For the typical peanut chews recipe with chocolate on top when do you cut them? Warm? Cool? Frozen?

And any tips to making the chocolate look smooth on top?
What do you cut with? Knife or cookie cutter? Id like even squares. Any tips?

Bang the pan on counter a few times, like lift and drop so it flattens.
The peanut chews need to be really flat also.
I use a knife to cut, I don't such a good job tho. I lose patience.
Your supposed to cut the center first, then even, say 3 rows on each one.
They sell 2 handled knives that are supposed to help for even cutting.

Flatten the top with the back of a spoon while still hot and allow to cool fully before putting the chocolate. Allow chocolate to cool completely before cutting through.
Don’t cut when frozen.

Press the peanut chews tightly on pan with a parchment paer underneath. You can then flip over to have a very flat surface. Place chocolate on top. Cut when set. I usually put it in the fridge.

Its a long knife that is made to cut even slices of cakes.

A double handed knife, usually made two cut huge cheese wheels.
No need to buy such a thing just for a peanut chew unless you make it very frequently.
