Freezing food for Pesach 101

I usually cook fresh the day or two before, but this year, I need tips on what freezes nicely, and what needs to be fresh. It also needs to be packed up and driven an hour away so I might need tips on that as well. Please advise:

Boiled corned beef in liquid
Potato kugel
Broccoli Kugel cups
Apple "crumble" kugel cups
Chicken soup
Chicken on the bone
Pesach brownie
Macaroons
Mousse cups (I know it freezes, but will it realistically travel well, in Israel?)
Roasted veggies
Mashed potatoes in crepes
Mushroom sauce
Fish in sauce

Salad and plain lettuce for the seder, how far can it be made in advance and still be good?

Salad def not more then 2 days ahead cut each part separately and combine before serving.
