To be honest, I'm not really sure. It's not our Minhag, but we have a wide variety of guests over Rosh Hashana, with a lot of them being Sefardic Israelis and we are trying to have everyone's Minhagim.

I just boil the blackeyed peas then season with salt and pepper.
Zucchini - I make a zucchini kugel
Pumpkin - open a can of pumpkin (like for pumpkin pie but not the pie mix) add a can of crushed pineapple(without the juice) then add about 1/2 cup sugar. Bake for about 45 minutes = until firmish.
beets - sweet chrain on the fish
cant think of anything else right now - too much to do before I can start for RH!

We eat our blackeyed peas sweet. I buy the cans and boil with sugar and water.

I combine two Simanim: leeks and black-eyed peas. Dice some leeks, and fry in oil. Then, add black-eyed peas (either canned, drained peas, or those you have boiled yourself). Season with salt and pepper. This is so tasty, your guests will enjoy eating it as a side-dish as well.

Another idea: zucchini is also a siman you can cook and serve as a side dish.
My favorite zucchini recipe is simple: dice the zucchini, place in a small saucepan, add a can of tomato sauce, two TBSP. sugar, and a teaspoonful of apple cider vinegar. Cook until tender.

I do this too.
black-eyed peas are called "rubia" in Aramaic: that we should be fruitful and multiply ("nifre v'nirbe")

I make an omelet with leeks.
I did the black eyed peas with sugar last year. I couldn't find them in the store yesterday, so I don't think we'll have them at all this year.

I think I'm making rice with dates.
Sweet and sour baby carrots.
Rubia sold here isnt black eyed peas, but string bean type things. Maybe I'll fry that with leek.
Cabbage salad with oil, salt, and pepper.
Beet salad.

Leek patties (delish, like latkes)
I will make raw beet salad
Rubia/Lubia = black eyed peas in an onion/honey sauce with turmeric
Pumpkin and greens salad
plain dates
apple and honey
rimon the second day for shehechiyanu
I don't do fish heads or sheep heads.

What's the reicpe for the rubia in onion/honey sauce. I made a black eyed pea soup and it was awful. Tried black eyed pea latkes and they were nearly as bad Looking for something new.
Leek patties sound delicious. Do you have a recipe for that?

You may have to add more matza meal if the batter looks too soggy (make sure you really squeeze out as much liquid as possible from the cooked leeks). If the batter looks too hard, you can add either liquid from the leeks or another egg. Roughly it should be in a similar consistency to latkes.

I serve mine straight up. Carrot sticks, apples & honey, and challah w/ honey. The only thing I don't do is real heads...I use gummy fish.

That's cute, where did you get the gummy fish?
We do some simanim at the begiing - like apples and honey and dates, the rest we do as we go along with the meal. Making our own up according to what we're having. So we'll say the fish yehi ratzon with the gefilta first night or salmon/tilapia (whatever we end up buying) second night, there is carrot in the soup/gefilta/salad, etc. Some examples of unique simanim are soup שיתמרקו עוונותינו banans שיבנה בית המקדש , soup nuts שנשקוד על תלמודינו and so on and so forth.
But I like the idea of serving gummy fish headsas a siman.
