Ok, so we already make compote, baked apples and poached pears. My kids have already begun asking for cakes, etc... and we are getting a little tired of the fruit.
Ideas PLEASE!!!! If it makes any difference, we eat g'brokts.

this is a fruit idea, but different. we make frozen fruit ices. pureed pineapple, some squeezed lemon juice, squeezed orange juice, pureed banana. frozen banana rolled in ground nuts.

If you make a chocolate ganache and then whip it, it tastes exactly like chocolate mousse. No eggs used.

Throw in a can of jellied cranberry sauce too (a la Tamar Ansh) - yum!

apple crumble? I imagine you can make some sort of topping using matza meal and margerine.
I make a lot of frozen smoothies. make a big batch of smoothie, the kids can drink some and then freeze in cups with sticks.

Frozen Mousse, Black and White (P, KLP, TNT)

Serves: 12 to 16
Crumble Mixture:
1 12-to-14-ozs. package Passover chocolate cake mix
1/2 cup sugar
1/2 cup margarine
Vanilla Layer:
1 8-oz. container nondairy topping
1/2 cup nondairy creamer
1 package Passover vanilla instant pudding mix
Chocolate Layer:
1 8-oz. container nondairy topping
1/2 cup nondairy creamer
1 package Passover instant chocolate pudding mix
Chocolate shavings and fresh strawberries, to garnish
Make Crumble Mixture:
Combine mixture together in a 9"x13" baking pan and mix together until crumbly. Spread evenly in pan. Bake in a preheated oven at 350°F for 25 minutes. When cool, coarsely crumble the mixture (use your hands or a food processor). Spread 1/3 of the mixture in a greased 10" springform pan. Reserve remaining mixture.
Make Vanilla Layer:
Beat nondairy topping until thick. Add vanilla pudding mix and nondairy creamer; blend well. Pour into springform pan. Top with 1/3 of the reserved crumble mixture.
Make Second (Chocolate) Layer:
Beat nondairy topping until thick. Add chocolate pudding mix and nondairy creamer; blend well. Pour into springform pan. Top with remaining crumble mixture. Sprinkle with chocolate shavings. Wrap well and freeze several hours or overnight. (Can be prepared in advance.) Serve frozen. Garnish with fresh strawberries when serving.
I found this online, and made it and it comes out pretty good.
the only thing I change, is doubling the nondairy topping.

You can make a matzah layer cake - soak (machine) matzos in wine, layer with chocolate cream. I know I saw a recipe for this somewhere, but I can't remember where.

A trifle? Can be really easy if you buy a premade angel food cake, jar of cherry pie filling and some chocolate sauce and whipped cream...
Mock chocolate mousse made from chocolate, sugar, vanilla, and silken tofu.
Lemon bars
Key lime pie
plum tart
apple dumpling
meringues with raspberry sauce
Ahhh, I could go on, but it wouldn't be good for the diet!

Didn't realize this was Pesach specific...
You can make an egg free Angel food cake using Ener-G egg replacement. I tweak the recipe a little also to use less sugar and some agave syrup to help keep it light.

lemon ices
2 cups boiling water
1 1/4 cup sugar
1/8 tsp. salt
1/2-3/4 cup lemon juice
dissolve salt and sugar in boiling water cool add lemon juice freeze over night remove from freezer and beat with hand mixer return to freezer
other flavors to try:
grape:
1 1/2 cups boiling water
2/3 cup sugar
1 cup grape juice
1/4 cup orange juice
2 tbs. lemon juice
orange:
3 cups boiling water
1 cup sugar
3 cups orange juice
1/3 cup lemon juice
grapefruit:
4 cups boiling water
2 cups sugar
3 1/2 cups grapefruit juice
orange pineapple:
1/2 cup boiling water
1/2 cup sugar
2 cups orange juice
2 cups pineapple juice
1 Tbs. lemon juice

its threads such as these that make me realize just how much we dont eat.
besides wine, grape juice, and oil we dont buy anything else thats processed.
dessert is applesauce or fruit.
some people in my family use sugar (on pesach, only boiled) so b4 pesach they make ice cream, peanut brittle and cakes (w/ homemade potatoe starch)
ill think of u while I eat my endless eggs/fruits/veges/meat and chicken oh and matzah
