What do you think is the best non hydrogenated, non dairy alternative to butter when you're baking? Smart Balance? Earth Balance (the green or yellow?)? Other? What's most similar to butter?

If you want the buttery consistancy, the Smart Balance that is made for baking (some of the versions are not - be careful).
But I would try to figure out how to play with the recipe so that I could use oil instead of butter.

Soy Garden. Not that similar to butter, but it works really well in recipes.
