both very easy recipes.

the salad is just lettuce, pomegranate seeds, diced pears, and any other vegis you would like to add. candied pecans or other nuts are a nice addition.
there are a few different dressings you can use.
dressing 1:
* 2 Tablespoons balsamic vinegar
* 1 Tablespoon red wine vinegar
* 1 Tablespoon Dijon mustard
* 1 teaspoon light brown sugar
* 1 garlic clove, crushed through a press (optional)
* 1/2 teaspoon salt
* 1/4 teaspoon freshly ground black pepper
* 3/4 cup extra virgin olive oil

dressing 2:
3 tbsp olive oil
3 tbsp balsamic vinegar
5 tbsp raspberries, fresh or frozen (could be a problem with bugs though)
1/8 tsp salt
pepper
1 dash sugar

or when I am lazy/ don't have all the ingredients
I just toss the salad with lemon juice, oil, sugar, salt, pepper
this works fine also.

salmon roll is very easy.

1 can ounces salmon, drained
1 teaspoon dried parsley flakes
1/2 teaspoon dried dill
1 egg, beaten
1 teaspoon grated onion
1 puff pastry dough or package of crescent rolls

Mix salmon, egg, parsley, onion and dill; carefully spread on puff pastry or crescent triangles. Roll up after spreading with salmon. Bake on cookie sheet at 350° for 12 to 15 minutes. Serve this salmon recipe with a dill dip

I use mayo, sour cream (you can do w/ out the sour cream) a little lemon juice, dill flakes, salt, pepper. I sometimes chop up onions and cucumber with it.
sorry no measurements.

We may have an unbalance diet. So far I have made marshmallow clouds, chocolate deluxe marshmallow bars, peanut butter cream pie, butterscotch brownies and chocolate cake.

I may have to add some other food to the menu. LOL

Pineapple wrappers are canned pineapple rings dried on paper towels, with thin strips of puff pastry wrapped around (weave in and out)
Bake, pastry blows up and covers most of pineapple.

Coat with icing sugar, and serve (as side dish or along desert)
