My kids are very picky about cottage cheese and only eat Brand X. Unfortunately DH got 3 pots of Brand Y which noone seems to be touching as kids don't like the consistency, DH doesn't like "because it's sour". What can I do with cottage cheese? It's plain, lumpy/large-curd ones.

You could make cottage cheese pancakes (if your family will eat that.) Since it's lumpy, I would beat it well then add the other ingredients.
A guess for measurements would be : 1 lb cottage cheese, 2 eggs, 1/4 cup sugar, around 1 cup to 1 1/2 cups flour and a pinch of cinnamon if you like that.
Fry and eat right away.

if you ground it in the blender, would that be okay? you can make cheesecake and kee that in the freezer.
