I would like to make a Pumpkin Pie and Tiramisu on Monday to eat on Thursday. Do you think its ok or too early (3 days) . Will pie get soggy? Do you think its better closer to serving time?

Make the pumpkin pie and then freeze it. Reheat on a low temp Thursday.

Never made tiramisu so I have no idea.

I think the cake part of the tiramisu will get soggy and the creme (cream?) part will separate and collapse.

I am planning on making pumpkin pie in glass pyrex - can I freeze it there as well and then directly put in oven??? Or any other better method?

Check the bottom of the pyrex dish. It should tell you if it's safe to freeze.

My pyrex says not to put directly from one temperature extreme to another - so freezer directly to oven is no good, it can crack. Haven't tried it out yet though.

maybe I should prepare the pie crust before put in fridge and fill/bake it on Wed/Thursday.
