Im talking about meatballs with spaghetti.
Any suggestions of an easy but tasty, but certainly healthy recipe?

Italian Spaghetti & Meatballs
Sauce:
2 tablespoons oil
2 tablespoons minced garlic
2 bay leaves
¼ teaspoon red (cayenne) pepper
29-ounce can tomatoes
14-ounce can tomato puree
13-ounce can tomato paste
29-ounce can water
½ cup sugar
1 teaspoon dried parsley
1 teaspoon dried basil
1 teaspoon dried oregano
Heat oil with next three ingredients (do not brown). Add everything else and mix. Simmer while making meat balls.
Meat Balls:
3 pounds ground beef
4 eggs
1 cup bread crumbs
1 cup water
garlic powder and black pepper to taste
Mix together, and shape into meatballs (about 1½ inches in diameter), and drop into sauce. Simmer for 1½ hours.
For low fat version, omit oil, and just add spices to sauce. Use ground, dark turkey instead of ground beef, Egg Beaters instead of eggs and only ½ cup of water.

Turkey Meatballs
2 pounds ground turkey
1 medium onion, chopped
1/2 red pepper, chopped
1/2 green pepper, chopped
3 cloves garlic, chopped
2 eggs
1 Tbsp. bread crumbs
1 tsp. salt
1 tsp. ground pepper
Olive oil
Heat oil in large skillet (use enough oil to cover just the bottom of skillet). Add onion and stir briefly, until it's almost yellow. Add red pepper, green pepper and fry for 2 minutes. Add garlic and stir for 2 minutes, then remove from stove to cool. Let cool for 10 minutes.
Place flour on a large plate (for ease in creating the balls). With a wooden spoon, mix together turkey, eggs, parsley, salt, pepper, sautéed onions and peppers, and bread crumbs. Form a tablespoon size of the turkey mixture in the shape of ball. Place each meatball in skillet and fry until slightly brown. Slightly press the center of each meatball to make sure the center cooks.

make it more healthy by baking it on parchment paper instead of frying

I love SV's meatball and dumpling soup recipe! Very hearty and healthful.
And really look forward to trying Mrs Bissli's meatballs in carrot sauce recipe.
