Tzatzki, the real McCoy!
* 1 cup Greek yogurt
* 1/2 cucumber
* 1 teasp salt
* 1 tbsp lemon juice (I like mine lemony, reduce to 1/2 tbsp if you like it less sour)
* 2 cloves garlic, finely minced
* 1/2 teasp each chopped mint and dill (pref fresh but dried is ok, use maybe a bit more if using dried)
* 1 tbsp virgin olive oil
Coarsely grate cucumber (remove seeds first if looks too seedy--less of a problem with gherkins). Sprinkle salt and lemon juice, leave for 15-20min till liquid collects. Squeeze out most, but not all of liquid. Add yogurt, cucumber and the rest of ingredients and mix. Leave for 1hr or so to let taste/flavour settle. Serve as a dip in the first course with pitta or pitta chips, or scoop up on its own. Some people serve with fish (we don't, no fish/dairy mix).

Orange semolina cake (basbousa)
* 1/2 cup fine semolina flour
* 1/2 cup ground almond
*1 cup self-raising flour
* 3/4 cup sugar
* rind of 2 small-ish or 1 large orange, grated
* 2 eggs
* 1/3 cup vegetable oil
* 1/2 cup greek yogurt
For syrup: juice from 1 orange, 4 tbsp icing sugar, 1 teasp orange blossom water (optional)
Mix all dry ingredients. Add eggs, oil, yogurt. Bake in a greased 20cm round tin at 180C for 45min to 50min till skewer comes out clean. While the cake is baking, dissolve icing sugar in orange juice, add orange blossom water. Once cake is done, poke holes and pour syrup while the cake is still warm. Cover with cling film. It's not overly sweet, very fruity and moist because of yogurt.
