It's so cold... I was thinking of making stewed fruit for shabbos lunch dessert. Do you think if I put it in a sealed roasting bag in the cholent, it would stay good overnight? I imagine it would fall apart a bit... or a lot. Maybe whole stewed fruits?

I wouldn't put it in the cholent, flavor would likely transfer. I've done this for dessert, but I have a triple crock pot: one base with three pots and three knobs. you can put whole apples in for warm baked apples, berries with honey and water for a hot drink, etc. if cholent isn't a must in your family, consider skipping it and serving the fruit instead.

You may as well put the fruit directly in the cholent, the flavour will be the same.
Can you serve stewed fruit at night instead?

It's either cholent in the crockpot. Or stewed fruits in the cockpot. Not both. Even if they are in separate bags.
