I'm in the middle of shaping my challah and just realized I forgot to take challah. So I think that's fine, I just have to put all my rising challahs together under a towel and take challah. Meanwhile I'd like to take part of my dough (I'm in the middle of shaping as we type...) and make it kokosh cake. Do I still take challah even though it's not "challah" or Hamotzi?

But, I've been told to take Challah out of any large amount of flour even if subsequently it became challah, cake, cookies, babka etc.
ETA - obviously not taking Challah from the flour, but whenever I work with a large amount of flour, challah must be taken. IIRC, with cake batter, it can only be taken after it is baked because it isn't an 'isa'.
