I starting using bread flour for my challah and it's amazing. My recipe is Rebbetzin Kanievsky's from the biography.
I'm making onion rolls from a recipe I haven't tried in a while that calls for regular flour. Should I try bread flour or not risk it?

yes
bread flour has high-gluten aka more protein ... it helps make it fluffy
another trick I use is ground flax seed to regular or even whole wheat flour for a light and airy dough
