...if not making esrog jelly, besamim , cake, etc.

My DH burns the esrog and lulav from Succos and the Chanukah wicks in the chametz on erev Pesach. He was the first person I've seen doing this.

Let it rot and then you can throw it out. To make it rot, cut it open and then leave it in a plastic bag for a while.

We dry them and keep them in a vase as a decoration piece. Stick the hadassim in for a nice aroma until their smell is gone.

If you cut it open (for letting it rot as mentioned above) you can take out some of the seeds and plant them in a flowerpot that you keep in a warm place. They easily grow into little etrog trees, takes them about a month to sprout. We have one from a few years ago in our garden. They need a warm climate or cold protection though.
