Yes. I've done that with a different doughless Potatoe Knishes recipe . I had flour in that recipe .

Questions:
1. Do you freeze them baked or pre-baked
2. If you freeze pre-baked do you put them in the oven frozen
3. Has anyone made this using a piping bag to come out fancy.
Like you pipe out an oval, put onions in the middle, then pipe rosettes on top.
4. Will I be able to freeze them if I use the piping method mentioned above.
I think it'll be a hit on Pesach.
5. Did anyone ever made something similar using cauliflower or brocolli or maybe butternut squash, yum
Now my low carb creative juices are starting to flow.

You freeze them baked. That's what's so great about this recipe.
I would think that with other vegetables it may not come out the same since they have more water content. But I know people make veggie kugels on Pesach so there has got to be a way. I just have a feeling they all have lots of potatoe and potatoe starch in them to bind it all together.

I’ve made yapchik using cauliflower instead of potato. I’m thinking same idea but stuffed with onion. Or is this just something completely different.
Also, can I freeze pre-baked, and bake them fresh. I would do some potato and some sweet potato or other veggie.
