this is the way my dh explained it to me and I think it's on a level that we can understand, cuz the whole thing of bechira is a very complicated one.
anyway, since Hashem created us and everything in our lives, he knows us best and that is why He knows what we will do. like sometimes you just know what your dh's response would be to something, because you know him so well...
so yes, Hashem gives us the bechira, but He knows what we will do because He knows us so well. according to the situation that Hahem put us in, with our Kochos, thought, emotions,etc. taht Hashem created us with, He knows the outcome, yet it's still a choise for us...

I think the "time machine" mashal works pretty well (like the "Nancy Drew" one mentioned earlier):
If you were to get into a time machine, go forward, and see the future, would you not be making your own choices after coming back to the present? Of course you would. You just would have seen what those choices would be.
