When I bake with xylitol the cookies always come out really soft, any ideas of other sweeteners that dont affect the texture?

Can try monk fruit, honey,
Coconut sugar I find is similar to brown sugar

If you are using a recipe that has normal sugar, it won't work because baking is a form of "chemistry" as ingredients such as sugar produce a specific result.
Brown sugar would be different than white sugar and honey would be different than either.
Why are you subbing? Your best option would be to find recipes that are specific to your need to use alternative forms of sweeteners. There are recipes for diabetics for example. Or recipes that are theoretically more healthy so don't use cane or beet processed sugar.
