I don't want to be busy all night making latkas. Can I shred the potatoes now and make the latkas late in the day?
Also, has anyone tried making latkas in a betty crocker? Does it taste the same? How would I make it?

I've found that the batter does ok in the fridge for a few hours. I wouldn't leave the shredded potatoes alone, they'll go brown

You can fry the latkes now, and rewarm later.
It's not so good in the betty & it takes longer.

Yes. You can even freeze them into patty shapes and fry them later. Insta-latkes
