Why couldnt they just send out another notice to cancel the decree? Instead why did the jews have to go on a killing spree? Also didnt it cause for some jews to be killed? Unless im missing something...

A decree signed and sealed by the king couldn’t be canceled or revoked

Nobody could take back the king’s decree. Not even the king himself. That was the law.
This is also why vashti couldn’t be redeemed even when the king changed his mind.

I believe they were only given permission to kill those that came to kill them, not carte blanche to kill anyone they saw.
