Dredge each strand in cinnamon/sugar mixture before braiding.
Knead chocolate chips into dough before braiding. It's messy to eat but so delicious.

I do the exact same thing. Some sprinkled with cinnamon sugar, and some kneaded in chocolate chips. I also do a sweet challah rather than my normal water challah.

I put sugar in the egg for brushing for sweetness. and oil for easier brushing
a friend told me she puts a packet (10 grams? ) of vanilla sugar for a kg of flour together with the rest of the ingredients.
