I wouldn't use mozzarella because they turn more stringly. Good alternative to kashkaval is 2 parts sharp cheddar and 1 part feta or parmesan, all mixed together.
I mix 2 medium beaten eggs with 2 cups grated sharp cheddar, 1 cup edam or gouda, 1/2 cup feta, a generous sprinkling of dill (you can omit it). Comes out just the right balance. You can mix in a bit of mashed potatoes, chopped cooked aubergines, or chopped cooked spinach as well.

mix mozzarella shreds along with farmer's cheese & spice with garlic, black pepper & oregano - add some black olive slices - in pan sautee broccoli or spinach [whichever you like] with slivers of onion & red pepper ... fill your dough as per usual
