This recipe is from the Family First a couple of years back. We love it.
1 16 oz bag frozen cauliflower
1/2 cup matza meal
1/2 tbsp salt
3 eggs
Cook cauliflower until soft. Mash well and add remaining ingredients. Form into latkes; fry until crispy.
NOTE: I have used riced cauliflower instead of cooking and mashing florets, and it tasted just as good.

I cant use matza meal, u think I can sub almond flour?

with riced cauli u didnt need to cook it at all?

Butternut squash latkes taste like the real thing and need no flour.

Im on a really strict diet so not b.n.squash :/

I imagine you can use almond flour or another diet-approved flour, but I haven't tried making it that way.
For the riced cauliflower, I would suggest you check the package instructions to see if cooking is required. You may be able to just microwave the whole bag instead of actually cooking it.
