Leftover bread/challah recipes

Savory and/or Sweet Breaded chicken

8 - 10 chicken pieces
3 cups homemade breadcrumbs
2 tbsp sesame seeds (optional)
1 tbsp parsley flakes
1 tbsp paprika
pinch of ground pepper
1/2 tsp oregano
1 tbsp onion powder mix (optional)
3 eggs or 4 egg whites
mustard (any kind)
1 - 2 medium sized onions sliced
baking spray
canola oil
apricot jam (optional)

Mix together #2 - #7. Beat eggs and a generous squirt of mustard.
Preheat oven to 375.
Spray roasting pan with baking spray.
Add layer of sliced onions.
Dip each piece of chicken in breadcrumbs, egg, breadcrumbs.
Lay on onions.
Spray with baking spray.
Bake uncovered for 1 hour.

For a sweet taste put a few spoon fulls of apricot jam on the chicken about 15 minutes before it is done cooking.

Okay, so here it is...
Main:
1 1/2 challahs soaked in water
1/2 cup sugar
1 teaspoon cinnamon
1 cup golden raisins (optional)
2 eggs
1/2 cup amaretto

topping - mix on stove top stirring constantly until it thickens:
1 stick margarine (1/2 cup)
1/2 cup amaretto
1/2 cup sugar

Soak challahs in water. Squeeze out until moist (not too dry). Mix all ingredients well. Grease 9x13 pan. Bake at 350 for about 1 hour. Let cool and slice in squares. Pour melted butter mixture over kugel and broil in oven for 5 minutes (watch VERY carefully).

Thanks - dh will love this - but I never have 1 1/2 challahs. I'll try cutting it in half in an 8x8.

You're welcome. I also don't usually have whole challahs left over like that, but I've estimated. I usually end up with all the little heels of challahs stuck on one shelf in the back of the frig. So once in a blue moon I take them all out and figure up around a pound and a half.

So here I am with lots of leftover challah (I've been making smaller challos, and every few weeks make 5 lbs. of kuchen so I don't often have this much) and as I checked the archives for leftover challah I found a thread I started.
Here are some ideas I found after googling leftover bread and I'm wondering if anyone's tried them:
bread sticks - slice into sticks, coat in marg. and seasonings, bake (assuming my challah doesn't fall apart...)
pastry cups - shmush into muffin tins, bake, fill (then bake again? Not clear.)

Thanks for any ideas or input

Really? (When I checked the archives under "leftover" I found some pretty interesting leftover cholent uses.)

wtvr, what in the world do you mean that you put leftover challah in the cholent? like kishka?? sounds cool....

PinkFridge, here are my ideas:

-creamy pineapple challah kugel
-sweet challah kugel
-homemade bread crumbs
-kneidlach (my friend uses her leftover challah to make breadcrumbs, and then makes her m.b.s out of b.c.s)
-breaded chicken
-shnitzel
-Roll ups - you roll out a slice of bread/challah with a rolling pin, fill with tuna, cream cheese, avocado, wtvr, roll it up jelly roll style and slice into rounds (If you freeze it first, it becomes easier to slice)
-french toast
-french toast casserole
-feed it to the birds?

It's that German super-sized matzaball look-alikes, no? Can you share a recipe for us? They're sooooo yum with roasts & gravy...

if you like spicy, my mother makes boya:
soak the challah in water
squeeze out water when soft
put in pan as flat as want, the thinner, the crunchier it will be
sprinkle spices, whatever you want
bake
