we had a bbq sheva brachos. I don't recall it being any fancier than a regular bbq. it was our favorite one. it was relaxed, didn't require dressing up, and it was pretty much friends only. best sheva brachos ever!

I've never been to a "fancy BBQ", but if I went to one, I'd appreciate things that are not too messy, 'cuz I'd probably be wearing something nice. So, hotdogs/burgers in a bun are okay, but not saucy wings/drumsticks that couldn't be eaten with a fork (seriously, I SO don't get the appeal of chicken wings... way too much work for way too little reward). Corn on the cob should at minimum have those pokey things that you hold on either side, I forget what they're called.
LOTS OF NAPKINS!

we made one for my sister.
the meat was london broil, very simple to bbq (marinate over night, and cooks each side for 7 min each), PM for recipe if you want.
lots of salads
maybe also grilled chicken cutlets, also really simple recipe if you want.

My parents have done a couple times. We grille a lot before and put in sternos so it was ready. We did
chicken drumsticks
burger
chicken cutlets.
Roasted potatoes
corn
Grilled veggies
three lettuce salads
shish cabobs
put out pickles..olives...ketchup...mustard...tomatoes...sauteed onions for sandwiches
we set the tables outside in backyard nice with China dishes. Was casual but not too casual. Still felt like sheva brochos.

Different versions of everything, not the traditional BBQ foods. Southwest turkey burgers, lemon and herb chicken thighs, churrasco steak with chimichurri. That kind of thing.

Use nice tablecloths and paper goods. Grilled chicken, steak, lots of salads. If you're not having kids you can skip the hotdogs and hamburgers. Start with a nice drink or appetizer, end with a somewhat elegant dessert. You probably won't be serving individual portions, but you can do it buffet style so you don't have the food on the table.
You can rent a tent or a canopy so it's not so outdoorsy.

I would do sliders instead of burgers-they are daintier and less messy.
Also, you can fancy up the food. grill onions and mushrooms or pastrami and serve on burgers. make honey mustard and garlic mayo dressings.
maybe a salad bar?

If you do hotdogs and hamburgers you can do a topping bar with "upscale" toppings. Think house of dogs.
Are you serving buffet or sit down? If buffet you can tie the cutlery in checkered napkins with twine.
Have a large water dispenser with sliced lemons and limes
If outdoors candles on the tables
mini old looking glass soda bottles - in a tub filled with ice.

Have plenty of variety in food and drink. Fancy paper plates etc.

I think alcoholic cocktails makes it a bit more upscale. Not a bar, just pitchers of things like margaritas and hard lemonade slush.
I'd also have a large variety of marinated salads and upscale condiments.
