Cheese blintzes are quite easy to make low fat.
Use fat free cottage cheese and more egg whites than egg yolks.

Classic Cheese Blintzes - Spice & Spirit

Batter:
4 eggs
1/2 cup milk (fat free)
1/2 cup water
1 cup flour
1/4 cup sugar (substitute)
1 Tbsp vanilla sugar (1 tsp vanilla extract)
pinch of salt
1 Tbsp oil (optional)

Filling:
1 lb. cottage cheese, strained (fat free)
2 egg yolks
2 Tbsp flour (optional - can use egg whites)
2 Tbsp sugar (or more to taste)
1 tsp vanilla sugar

In a large mixing bowl combine eggs, milk, water and blend well. Gradually add flour, then both sugars, salt and optional oil. Beat until there are no lumps in batter.
Heat a 7" nonstick skillet and spray with oil. Ladle approx. 1/3 cup batter into skillet. Tilt pan to swirl the batter so it covers the bottom of the skillet. Fry on side until small air bubbles form and top is set. Bottom should be just a touch golden brown. When done, carefully loosen edges of blintz and slip out of skillet onto a plate.
Turn the blintz so golden brown side is up. Place 3 Tbsp filling on one edge of in a 2 1/2" long by 1" wide mound.
Roll once to cover filling. Fold the sides into the center and continue rolling until completely closed.
Heat the skillet and spray with oil. Place blintz seam side down in the skillet and fry 2 minutes on each side, turning once.
